Chicken, Mushroom, and Spinach Lasagna
Hey! I’ve got a yummy chicken, mushroom, and spinach lasagna recipe for you. Here’s how you can make it:
Ingredients:
– 9 lasagna noodles
– 1 lb chicken breast, cooked and shredded
– 8 oz baby spinach
– 8 oz mushrooms, sliced
– 2 cloves garlic, minced
– 1 onion, chopped
– 24 oz marinara sauce
– 15 oz ricotta cheese
– 1 egg
– 2 cups shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– Salt, pepper, and Italian seasoning to taste
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Cook the lasagna noodles according to package instructions, then drain and set aside.
3. In a skillet, sauté the garlic and onion until fragrant. Add the mushrooms and cook until they release their liquid.
4. Add the spinach and cook until wilted. Season with salt, pepper, and Italian seasoning.
5. In a bowl, mix the ricotta cheese, egg, and half of the shredded mozzarella cheese.
6. In a greased baking dish, spread a layer of marinara sauce. Place 3 lasagna noodles on top.
7. Layer half of the chicken, mushroom, and spinach mixture over the noodles, then half of the ricotta mixture.
8. Repeat the layers – marinara sauce, noodles, chicken mixture, ricotta mixture.
9. Top with the remaining 3 lasagna noodles, marinara sauce, and the rest of the shredded mozzarella and Parmesan cheese.
10. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until bubbly and golden.
11. Let it cool slightly before slicing and serving.
