Cauliflower Steak with Mushrooms

Ingredients:
1 large head of cauliflower, trimmed and cut into 1-inch thick slices
4 tablespoons olive oil, divided
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper to taste
1 lb mushrooms, sliced
3 cloves garlic, minced
1 tablespoon fresh thyme leaves
1/4 cup vegetable broth
2 tablespoons balsamic vinegar
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Cauliflower Steaks:
Preheat your oven to 425°F (220°C).
Place the cauliflower steaks on a baking sheet. Drizzle with 2 tablespoons of olive oil and sprinkle with smoked paprika, garlic powder, salt, and pepper.
Roast in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and tender.
Cook the Mushrooms:
While the cauliflower is roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat.
Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes.
Add the minced garlic and fresh thyme leaves. Cook for another 1-2 minutes until fragrant.
Create the Sauce:
Pour in the vegetable broth and balsamic vinegar. Stir to combine and let the mixture simmer for about 3-4 minutes until slightly reduced.
Season with salt and pepper to taste.
Serve:
Place the roasted cauliflower steaks on a serving platter.
Spoon the mushroom mixture over the top of the cauliflower steaks.
Garnish with fresh parsley.
