- 2 medium zucchini, grated
- 1 large carrot, grated
- 1 cup cauliflower, finely chopped

- ¾–1 cup cooked bacon or ham, finely chopped

- 1 cup shredded mozzarella or cheddar
- ¾ cup self-rising flour
- ¼ cup grated Parmesan
- 2 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp dried Italian herbs

Directions
- Preheat oven to 375°F (190°C). Line a 9×9-inch baking pan with parchment.
- Place grated zucchini in a clean towel and squeeze out excess water.
- In a large bowl, combine zucchini, carrot, cauliflower, bell pepper, onion, and chopped bacon/ham.
- Add eggs, shredded cheese, Parmesan, flour, olive oil, garlic powder, herbs, salt, and pepper.
- Stir until everything is evenly combined.
- Spread the mixture evenly into the prepared pan and sprinkle a little extra cheese on top.
- Bake for 35–45 minutes, until golden brown and the center is firm.
- Rest for 10 minutes, then cut into squares and serve warm.
