- ½ cup shredded Monterey Jack cheese
- ½ cup crushed tortilla chips
- 2 tbsp fresh cilantro, chopped
- 1 jalapeño, thinly sliced, optional
Creamy Taco Dressing
- ½ cup sour cream or plain Greek yogurt
- ¼ cup mayonnaise
- 2 tbsp lime juice
- 1 tbsp salsa
- 1 tsp taco seasoning
- ½ tsp garlic powder
- ½ tsp cumin
- 1–2 tbsp water, as needed

Instructions
1. Cook the taco beef
Heat a large skillet over medium-high heat.
Add the ground beef and cook for 5–7 minutes, breaking it apart with a spoon until fully cooked.
Add the diced onion and cook for another 2–3 minutes.
Stir in the garlic and cook for about 30 seconds.
2. Season the beef
Add chili powder, cumin, paprika, oregano, salt, pepper, tomato paste, and water.
Stir well and simmer for 2–3 minutes, allowing the seasoning to coat the beef.

3. Prepare the dressing
