Ingredients
For the Ravioli
- 20 oz (565 g) refrigerated cheese ravioli
- 1 tbsp salt, for pasta water
For the Vegetables
- 2 tbsp olive oil
- 1 medium zucchini, sliced into half-moons
- 1½ cups asparagus, trimmed and cut into 1-inch pieces
- 1½ cups cherry tomatoes, halved
- 4 garlic cloves, finely minced
- ½ tsp Italian seasoning
- ¼ tsp red pepper flakes, optional
- ½ tsp salt
- ¼ tsp freshly ground black pepper
For the Sauce
- ½ cup reserved ravioli cooking water
- 2 tbsp butter
- 1 tbsp fresh lemon juice
- ¼ cup grated Parmesan cheese
- 2 tbsp fresh basil or parsley, chopped
- Optional: 1 tsp lemon zest
Optional Garnishes
- Extra Parmesan
- Fresh basil
- Freshly cracked black pepper
- Red pepper flakes
- Drizzle of extra-virgin olive oil
Step-by-Step Instructions
1. Prepare the vegetables
Wash and dry the vegetables well. Trim the asparagus and cut it into bite-sized pieces. Slice the zucchini and halve the cherry tomatoes.
2. Cook the ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook according to the package directions, usually 3–5 minutes for refrigerated ravioli.
Before draining, reserve ½ cup of the pasta water.
Drain the ravioli carefully and set aside.
Tip: Don’t overcook the ravioli. Once they float and are tender, they’re usually ready.
3. Sauté the asparagus
While the ravioli cooks, heat olive oil in a large skillet over medium-high heat.
Add the asparagus and cook for 3–4 minutes, stirring occasionally.
It should become bright green and tender-crisp.
4. Add the zucchini
Add the sliced zucchini to the skillet.
Cook for another 3–4 minutes, stirring occasionally, until lightly browned but still slightly firm.
5. Add tomatoes and garlic
Add the cherry tomatoes and cook for about 2 minutes.
Stir in the minced garlic, Italian seasoning, salt, black pepper, and optional red pepper flakes.
Cook for 30–60 seconds, just until the garlic becomes fragrant.
6. Make the light sauce
Reduce the heat to medium-low.
Add the butter, lemon juice, and about ¼ cup of the reserved ravioli water.
Stir gently until the butter melts and creates a light, glossy sauce.
Add a little more pasta water if the mixture looks dry.
7. Add the ravioli
Carefully add the cooked ravioli to the skillet.
Gently toss everything together for 1–2 minutes, being careful not to break the ravioli.
8. Finish with Parmesan
Turn off the heat.
Sprinkle Parmesan over the pasta and gently toss. Add lemon zest and fresh basil or parsley if using.
9. Serve
Transfer to serving plates and finish with extra Parmesan, fresh herbs, and a little freshly cracked black pepper.
Serve immediately while warm. 🍝✨
Recipe Tips
Don’t overcrowd the skillet: Cook the vegetables in a large pan so they sauté instead of becoming watery.
Reserve pasta water: The starchy water helps bring the butter, Parmesan, and lemon together into a silky sauce.
Use fresh garlic: Freshly minced garlic gives this recipe much more flavor than garlic powder.
Keep the vegetables slightly crisp: They provide a great contrast to the soft ravioli.
Want more sauce? Add another ¼ cup reserved pasta water and a little extra Parmesan.
Easy Variations
Chicken Ravioli
Add sliced cooked chicken for a heartier meal.
Shrimp Ravioli
Sauté peeled shrimp with the garlic and vegetables until fully cooked, then toss with the ravioli.
Extra Cheesy
Add shredded mozzarella or a little crumbled feta along with the Parmesan.
Mediterranean Style
Add Kalamata olives, spinach, feta, and a little oregano.
Spicy
Increase the red pepper flakes or add a small spoonful of chili paste.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
To reheat, place in a skillet over medium-low heat with a splash of water or broth. Stir gently until warmed through.
Avoid overheating the ravioli, as the pasta can become tough and the filling may dry out.
