Instructions

  2. Prepare the zucchini: Grate the zucchini and gently squeeze out excess liquid. Don’t squeeze it completely dry—you want some moisture to remain.
  3. Mix dry ingredients: In a bowl, combine oats, oat flour, cocoa powder, baking powder, baking soda, salt, and cinnamon.
  4. Mix wet ingredients: In another bowl, whisk eggs, Greek yogurt, maple syrup, milk, melted butter, and vanilla until smooth.
  5. Combine: Add the wet mixture to the dry ingredients and stir just until combined.
  6. Add zucchini: Fold in the shredded zucchini and chocolate chips. Let the batter sit for 5 minutes so the oats can absorb some moisture.
  7. Fill the pan: Divide batter evenly among 10–12 muffin cups, filling each about ¾ full.
