 Ingredients

For the Chicken:

  • 1 lb (450g) boneless, skinless chicken breast, cut into bite-size pieces
  • 1 tsp lemon pepper seasoning
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil

For the Garlic Parmesan Rice:

  • 1½ cups long-grain white rice
  • 3 cups chicken broth
  • 4–6 cloves garlic, minced
  • 4 tbsp butter
  • ½ cup freshly grated Parmesan cheese
  • 1 tbsp lemon juice
  • ¼ tsp red pepper flakes (optional)
  • Salt, to taste
  • Fresh parsley, chopped

The combination of chicken, garlic, butter, broth, rice, Parmesan, lemon, and parsley is consistent with common versions of this dish.

 Instructions

 Season the Chicken

Add chicken to a bowl. Season with lemon pepper, garlic powder, salt, and black pepper. Mix well.

 Cook the Chicken

Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6–8 minutes, turning occasionally, until golden brown and fully cooked.

Remove the chicken and set aside.

 Make the Garlic Butter Base

In the same pan, reduce the heat to medium. Add butter and minced garlic.

Cook for about 30–60 seconds until fragrant. Add red pepper flakes if desired.

 Cook the Rice

Add the uncooked rice and stir for 1 minute so it gets coated in the garlic butter.

Pour in the chicken broth and add a little salt.

Bring to a boil, then cover with a lid. Reduce heat to low and cook for 18–20 minutes, until the rice is tender.

 Add Parmesan

Once the rice is cooked, stir in:

  • Parmesan cheese
  • Lemon juice
  • Fresh parsley

Mix until creamy and delicious.

 Serve

Place the golden chicken on top of the creamy Garlic Parmesan Rice.

Garnish with extra parsley and Parmesan. Serve hot!
