  3. Pour into the dish and bake for about 25–30 minutes, or until a toothpick comes out clean.
  4. Cool the cake completely.
  5. Make the pineapple topping: Combine pineapple, sugar, cornstarch, and pineapple juice in a saucepan. Cook over medium heat for 3–5 minutes, stirring until slightly thickened. Cool completely.
  6. Make the cream: Beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold in whipped cream.
  7. Spread the cream mixture evenly over the cooled cake.
  8. Spoon the cooled pineapple mixture over the cream layer.
  9. Toast the coconut: Spread coconut in a dry skillet and cook over low heat, stirring frequently, until lightly golden. Coconut can brown quickly, so watch it carefully.
  10. Sprinkle toasted coconut over the pineapple layer.
  11. Refrigerate for at least 3 hours, preferably overnight.
  12. Cut into squares and serve with a small dollop of whipped cream.
