For the zucchini bites

  • 3 medium zucchini
  • 1 tsp salt
  • 1 cup shredded mozzarella
  • ½ cup finely grated Parmesan
  • 1 large egg
  • ¾ cup breadcrumbs or panko

 Creamy garlic-dill dip

  • ½ cup Greek yogurt or sour cream
  • ¼ cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 small garlic clove, finely minced
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • ¼ tsp salt

 Instructions

  1. Prepare the zucchini: Grate the zucchini and sprinkle with 1 tsp salt. Let it sit for 10 minutes.
  2. Place the zucchini in a clean kitchen towel and squeeze out as much liquid as possible. This is the most important step for crispy bites.
  3. Put the drained zucchini in a large bowl.
  4. Add mozzarella, Parmesan, egg, breadcrumbs, garlic, dill, parsley, Italian seasoning, paprika and black pepper.
  5. Mix until the mixture is moist but firm enough to hold its shape.
  6. Take about 1½ tablespoons of mixture and roll into a ball.
  7. If using the optional cheese center, place a small mozzarella cube inside and seal the mixture around it.
  8. Place the bites on a parchment-lined baking tray.
  9. Lightly brush or spray them with olive oil.
  10. Bake at 425°F (220°C) for 18–22 minutes, turning once halfway through, until golden and crisp.
  11. For extra browning, broil for 1–2 minutes at the end while watching carefully.
  12. Let them rest for 2–3 minutes before serving.

  1. Mix Greek yogurt/sour cream and mayonnaise.
  2. Add lemon juice, dill, parsley, garlic, garlic powder, pepper and salt.
  3. Stir until smooth.
  4. Refrigerate for 15–20 minutes before serving for better flavor.
