Ingredients

  • 1 lb (450 g) ground beef
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 medium tomatoes, chopped
  • 1 can (14.5 oz / 410 g) diced tomatoes
  • 1 can (8 oz / 225 g) tomato sauce
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp paprika
  • ½ tsp smoked paprika
  • 1 tsp Italian seasoning
  • ½ tsp dried oregano
  • ½ tsp black pepper
  • ½ tsp salt, or to taste
  • ¼ tsp red pepper flakes, optional
  • 1 cup cooked rice, optional
  • 2 tbsp fresh parsley, chopped

 Instructions

  1. Brown the beef: Heat olive oil in a large pot over medium-high heat. Add ground beef and cook for 5–7 minutes, breaking it into small pieces. Drain excess grease if needed.
  2. Add vegetables: Add onion and bell peppers. Cook for 4–5 minutes until they begin to soften.
  3. Add garlic and cook for 30–60 seconds until fragrant.
  4. Build the flavor: Stir in tomato paste, paprika, smoked paprika, Italian seasoning, oregano, black pepper and red pepper flakes. Cook for 1 minute.
  5. Add tomatoes and broth: Stir in chopped tomatoes, canned tomatoes, tomato sauce, beef broth and Worcestershire sauce.
  6. Bring the soup to a gentle boil, then reduce heat and simmer uncovered for 25–30 minutes, stirring occasionally. This type of ground-beef tomato soup commonly uses peppers, tomatoes and broth with a short simmer to bring the flavors together.
  7. Add rice: If using cooked rice, stir it in during the last 5 minutes.
  8. Taste and adjust salt and pepper.
  9. Garnish with fresh parsley and serve hot.
