Ingredients

Pork chops

  • 4 thick-cut bone-in pork chops, about 250–300 g (9–10 oz) each

  • 1½ tsp salt

  • 1 tsp freshly ground black pepper

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • 2 tbsp all-purpose flour

  • 2 tbsp vegetable or olive oil

Gravy

  • 1 medium onion, finely chopped

  • 5–6 cloves garlic, minced

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 2 cups (480 ml) beef or chicken broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp Dijon mustard

  • 1 tsp paprika

  • ½ tsp dried thyme

  • ½ tsp black pepper

  • ½ tsp salt, or to taste

  • ½ cup (120 ml) heavy cream

  • 1 tbsp chopped fresh parsley, optional

Method

  1. Season the pork.
    Pat the chops very dry. Mix salt, pepper, paprika, garlic powder and onion powder. Season both sides, then lightly dust with the 2 tbsp flour.

  2. Brown the chops.
    Heat oil in a large skillet over medium-high heat. Sear the chops for about 2–3 minutes per side, until nicely browned. They don’t need to be cooked through. Transfer to the slow cooker.

  3. Build the gravy.
    Reduce the skillet to medium heat. Add butter and onion. Cook for 3–4 minutes until softened. Add garlic and cook for another 30–45 seconds.

  4. Make the roux.
    Sprinkle in 2 tbsp flour and stir continuously for about 1 minute.

  5. Add the liquid.
    Gradually whisk in the broth, scraping up the browned bits from the skillet. Add Worcestershire sauce, Dijon, paprika, thyme, pepper and salt.

  6. Slow cook.
    Pour the gravy over the pork chops. Cover and cook:

    • LOW: 4–5 hours

    • HIGH: 2–3 hours

    Avoid substantially overcooking the chops, since they can become dry.

  7. Finish the gravy.
    Remove the pork chops. Stir the heavy cream into the gravy and return the chops to the slow cooker for about 5–10 minutes on LOW/WARM.

  8. Serve.
    Spoon plenty of the gravy over each chop and garnish with parsley.

  • Mashed potatoes

  • Buttered egg noodles

  • Rice

  • Steamed green beans

  • Roasted carrots

  • Crusty bread for the gravy
