Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add the ground beef and cook for 6–8 minutes, breaking it apart until browned.
- Add onion and carrots. Cook for 4–5 minutes.
- Add garlic and cook for another 30–60 seconds.
- Stir in tomato paste, paprika, thyme, parsley, black pepper, and salt.
- Add diced tomatoes, beef broth, bay leaf, and Worcestershire sauce.
- Bring the soup to a gentle boil.
- Add the chopped cabbage and stir well.
- Reduce heat, cover, and simmer for 25–35 minutes, until the cabbage and carrots are tender.
- Remove the bay leaf. Taste and adjust salt and pepper.
- Add a little lemon juice or apple cider vinegar for extra brightness, if desired.
