 Instructions

  1. Prepare the potatoes: Toss the potatoes with olive oil, garlic powder, Italian seasoning, paprika, salt, and pepper.
  2. Make the meat mixture: In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, Worcestershire sauce, salt, pepper, paprika, and Italian seasoning. Mix gently until combined.
  3. Shape the meatloaf: Divide the mixture into 6 small oval meatloaves.
  4. Prepare the slow cooker: Place the seasoned potatoes in the bottom of the slow cooker.
  5. Add the meatloaves: Arrange the mini meatloaves on top of or between the potatoes.
  6. Make the glaze: Mix ketchup, brown sugar, Worcestershire sauce, and mustard.
  7. Spread the glaze generously over each meatloaf.
  8. Cook:
    • LOW: 4–6 hours
    • HIGH: 2½–3½ hours
  9. Cook until the ground beef reaches 160°F (71°C) internally.
  10. For a more caramelized glaze, transfer the cooked meatloaves to a baking sheet and broil for 2–3 minutes, watching carefully.
  11. Garnish with fresh parsley and serve with the tender potatoes.
