Chicken

  • 4 boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper

Mushroom Gravy

  • 8 oz (225 g) mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1½ cups chicken broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • ½ cup heavy cream or milk
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season chicken: Pat chicken dry and season both sides with paprika, garlic powder, onion powder, thyme, salt, and pepper.
  2. Brown the chicken: Heat olive oil in a skillet over medium-high heat. Sear chicken for 2–3 minutes per side until golden. It does not need to cook through.
  3. Cook vegetables: In the same skillet, add butter, onion, and mushrooms. Cook for 4–5 minutes. Add garlic and cook another 30 seconds.
  4. Make gravy: Sprinkle flour over the mushrooms and stir for 1 minute. Slowly whisk in chicken broth and Worcestershire sauce until smooth.
  5. Transfer: Place chicken in the slow cooker and pour the mushroom-onion gravy over it.
  6. Slow cook: Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the chicken reaches 165°F (74°C) and is tender. Slow-cooker mushroom-gravy recipes commonly use a similar low-and-slow approach.
  7. Make it creamy: Stir in heavy cream during the final 15–20 minutes of cooking.
  8. Finish: Sprinkle with fresh parsley and spoon the rich mushroom gravy over the chicken.
