Chicken

  • 2 lb (900 g) boneless, skinless chicken breasts

  • ½ teaspoon salt

Instructions

1. Cook the chicken

Season the chicken breasts with salt, black pepper, garlic powder and cumin.

Place them in a pot and cover with water. Bring to a gentle simmer and cook until the chicken reaches 165°F / 74°C internally, usually about 12–20 minutes depending on thickness.

Remove the chicken and let it cool.

2. Shred the chicken

Once cool enough to handle, shred the chicken with two forks or chop it into small bite-sized pieces.

You want fairly small pieces so that every spoonful contains chicken and vegetables.

3. Prepare the vegetables

Drain and rinse the black beans.

Dice the:

  • Tomato

  • Red onion

  • Green bell pepper

  • Jalapeño, if using

Chop the cilantro.

4. Make the creamy dressing

In a separate bowl, combine:

  • Mayonnaise

  • Sour cream or Greek yogurt

  • Lime juice

  • Chili powder

  • Cumin

  • Garlic powder

  • Salt

  • Black pepper

  • Hot sauce, if using

Whisk until smooth and creamy.

5. Combine everything

Add the shredded chicken to a large mixing bowl.

Add:

  • Corn

  • Black beans

  • Tomato

  • Red onion

  • Bell pepper

  • Cilantro

  • Jalapeño

Pour the dressing over everything.

6. Mix gently

Fold everything together until the chicken and vegetables are evenly coated.

Don’t overmix, or the vegetables and chicken can become mushy.

7. Chill

Cover and refrigerate for at least 30 minutes.

This allows the lime, spices and creamy dressing to blend with the chicken.

8. Taste and adjust

Before serving, taste the salad.
