Full Step-by-Step Method
1. Prepare the meatloaf mixture
Add the ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, salt, pepper, paprika, Italian seasoning, and milk to a large bowl.
Mix gently until everything is combined. Do not overmix, or the meatloaf can become dense.
2. Shape the meatloaf
Lightly grease the slow cooker.
Shape the beef mixture into a loaf and place it in the center of the slow cooker.
3. Make the mushroom sauce
In a bowl, whisk together the cream of mushroom soup, beef broth, garlic powder, black pepper, and Italian seasoning.
Stir in the sliced mushrooms if using.
4. Add the sauce
Pour the creamy mushroom mixture evenly over the meatloaf, just as shown in the uploaded image.
5. Slow cook
Cover and cook:
- LOW: 5–6 hours
- HIGH: 3–4 hours
Cook until the center of the meatloaf reaches 160°F (71°C).
6. Add sour cream
If using sour cream, gently stir it into the mushroom sauce during the last 15–20 minutes of cooking.
7. Rest and serve
Carefully remove the meatloaf and let it rest for 10 minutes before slicing.
Spoon the creamy mushroom sauce over each slice and garnish with fresh parsley.
