Ingredients
For the Toast
- 4 slices sourdough, French bread, or Italian bread
- 2 medium ripe tomatoes, thinly sliced
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
- 2 cloves garlic, minced
- 2 tablespoons extra-virgin olive oil

Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
2. Prepare the Garlic Oil
In a small bowl, combine the olive oil and minced garlic.
Let it sit for a few minutes so the garlic flavors the oil.
3. Prepare the Bread
Arrange the bread slices on the baking sheet.
Brush both sides lightly with the garlic-infused olive oil.
For extra garlic flavor, gently rub a cut garlic clove over the surface of the bread.
4. Toast the Bread
Place the bread in the oven and bake for approximately 5–7 minutes, until the edges begin to turn golden and crisp.
5. Add the Tomatoes
Remove the bread from the oven.
Arrange the tomato slices evenly over each piece of toast.
Season lightly with salt, black pepper, and Italian seasoning.
6. Add the Cheese
Sprinkle mozzarella generously over the tomatoes.
Add Parmesan on top.
Try to keep most of the cheese toward the center of each slice so it doesn’t run off while baking.
7. Bake Until Golden
Return the toast to the oven.
Bake for another 7–10 minutes, until the cheese is completely melted and bubbling and the edges of the bread are crisp.
For a more golden top, broil for 1–2 minutes, watching closely.
8. Add Fresh Basil
Remove from the oven and immediately sprinkle with fresh chopped basil.
The warmth of the toast will release the basil’s aroma.
9. Finish and Serve
For an extra Mediterranean-style finish, drizzle a small amount of balsamic glaze over the top.
