Ingredients

Salad

  • 2 large English cucumbers (about 500–600 g), sliced into half-moons

  • 300 g cherry or grape tomatoes, halved

  • 150 g feta cheese, cut or crumbled into chunks

  • 100 g mixed olives, preferably Kalamata + green olives

  • ½ medium red onion, very thinly sliced

  • ¼ cup fresh dill, chopped

  • 2 tbsp fresh parsley, chopped — optional

  • ½ green bell pepper, diced — optional

  • 1–2 tbsp fresh oregano, or 1 tsp dried oregano

  • Black pepper, to taste

Dressing

  • 4 tbsp extra-virgin olive oil

  • 2 tbsp fresh lemon juice

  • 1 tbsp red-wine vinegar

  • 1 small garlic clove, finely grated/minced

  • ½ tsp dried oregano

  • ¼ tsp salt, or to taste

  • ¼ tsp black pepper

  • Optional: ½ tsp Dijon mustard for a slightly creamier dressing

Method

  1. Prepare the vegetables.
    Wash and dry the cucumbers and tomatoes. Slice cucumbers into roughly ½-cm half-moons and halve the tomatoes.

  2. Prepare the onion.
    Slice the red onion very thinly. For a milder flavor, soak it in cold water for 5–10 minutes, then drain well.

  3. Make the dressing.
    Whisk together olive oil, lemon juice, red-wine vinegar, garlic, oregano, salt and pepper until combined.

  4. Combine.
    Add cucumber, tomatoes, onion, olives and dill to a large bowl. Pour over the dressing and gently toss.

  5. Add feta last.
    Fold in the feta carefully so that some pieces remain intact, like in the pictured salad.

  6. Rest and serve.
    Let the salad sit for 10–15 minutes before serving. Taste and adjust lemon, salt and pepper.

Use a generous amount of fresh dill, a mixture of green and Kalamata olives, plenty of black pepper, and cut the feta into relatively large cubes rather than finely crumbling it.
