Ingredients

  • 4 bone-in pork chops, about 1–1¼ inches thick

  • 2 tbsp olive oil

  • 3 tbsp butter

  • 5 cloves garlic, minced

  • 1 cup chicken broth

  • 1 tbsp Worcestershire sauce

  • 1 tbsp honey or brown sugar

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ½ tsp black pepper

  • ¾ tsp salt

  • ½ tsp chili flakes, optional

  • 1 tbsp chopped fresh parsley, for garnish

 Directions

  1. Season the pork: Pat the chops dry. Combine paprika, Italian seasoning, onion powder, garlic powder, salt and pepper. Rub generously over both sides.

  2. Sear: Heat olive oil in a heavy oven-safe skillet over medium-high heat. Sear the pork chops for 3–4 minutes per side, until deeply golden. Remove to a plate.

  3. Make the garlic butter sauce: Reduce heat to medium. Add butter and minced garlic. Cook for about 30–60 seconds, just until fragrant.

  4. Deglaze: Add chicken broth, Worcestershire sauce and honey/brown sugar. Scrape the browned bits from the bottom of the pan.

  5. Return pork: Put the chops back into the skillet and spoon the sauce over them.

  6. Finish cooking: Cover and simmer gently for 15–25 minutes, turning once, until the pork reaches 145°F (63°C) internally. Avoid boiling hard, which can make pork chops tough.

  7. Rest: Remove from heat and let the chops rest for 5 minutes. Spoon the buttery garlic pan sauce over the top and garnish with parsley.

After the chops are cooked, place the uncovered skillet under a hot broiler for 1–2 minutes, watching closely, until the tops become deeply caramelized.
