Total Time: 45 minutes
Servings: 8 pastry cups
Difficulty: Easy
Best For: Appetizer, brunch, party food
Ingredients
For the Pastry Cups
1 sheet puff pastry, thawed
1 tbsp melted butter or olive oil
1 egg, beaten, for egg wash
¼ tsp garlic powder
Pinch of black pepper
For the Spinach & Feta Filling
2 cups fresh spinach, finely chopped
1 cup crumbled feta cheese
½ cup cream cheese, softened
1 large egg
¼ cup grated Parmesan cheese
2 cloves garlic, minced
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped, optional
½ tsp dried oregano
¼ tsp black pepper
¼ tsp salt, or to taste
Topping
⅓ cup sun-dried tomatoes, finely chopped
2 tbsp crumbled feta
1 tbsp chopped fresh parsley
1 tbsp olive oil, optional
Step-by-Step Method
1. Prepare the Spinach

Wash the spinach and chop it finely.

Heat a skillet over medium heat and add the spinach.

Cook for 2–3 minutes, just until wilted.

Transfer it to a plate and allow it to cool slightly.

Important:

Squeeze out as much excess water as possible. Too much moisture can make the pastry soggy.

2. Make the Filling

In a large bowl, combine:

Cream cheese
Feta
Parmesan
Egg
Garlic
Parsley
Dill
Oregano
Black pepper
Salt

Mix until creamy.

Add the cooled spinach and stir until evenly distributed.

3. Prepare the Sun-Dried Tomatoes

Drain the sun-dried tomatoes if packed in oil.

Pat them lightly with a paper towel and chop into small pieces.

Set aside.

4. Prepare the Puff Pastry

Preheat the oven to:

375°F (190°C)

Lightly grease an 8-cup muffin tin.

Place the thawed puff pastry on a lightly floured surface.

Cut it into 8 equal squares.

Gently press each pastry square into a muffin cup, allowing the corners to extend upward.

Don’t stretch the pastry too much.

5. Add the Filling

Spoon the spinach-feta mixture into each pastry cup.

Fill each one approximately ¾ full.

Don’t overfill because the creamy mixture will expand slightly during baking.

6. Add the Toppings

Sprinkle each cup with chopped sun-dried tomatoes.

Add a little extra crumbled feta on top.

Brush the exposed pastry edges lightly with beaten egg.

This gives the pastry the beautiful golden color shown in the image.

7. Bake

Place the muffin tin in the preheated oven.

Bake for approximately:

20–25 minutes

The pastry should be:

Golden brown
Crisp
Puffy
Firm around the edges

The filling should be set and lightly golden on top.

If the pastry becomes dark too quickly, loosely cover the top with foil during the final few minutes.

8. Cool & Serve

Remove the muffin tin from the oven.

Let the pastry cups cool for 5–10 minutes before removing them.

Garnish with fresh parsley or dill.

For an extra glossy finish, drizzle a tiny amount of olive oil over the top before serving.

Tips for Perfect Pastry Cups
Keep the spinach dry

This is one of the most important steps. Excess spinach water can make the pastry soft.

Keep puff pastry cold

Cold puff pastry rises better and creates flaky layers.

Don’t overfill

Leave a little space above the filling.

Use good-quality feta

Creamy feta gives the filling a much better flavor.

Don’t overbake

Remove the cups once the pastry is golden and the filling is set.

FAQs
1. Can I use frozen spinach?

Yes. Thaw it completely and squeeze out as much water as possible before adding it to the filling.

2. Can I make these ahead of time?

Yes. Prepare the filling up to 1 day ahead and refrigerate it. Assemble and bake when needed.

3. Can I use ricotta instead of cream cheese?

Yes. Replace the cream cheese with an equal amount of ricotta for a lighter, slightly softer filling.

4. Can I use crescent dough instead of puff pastry?

Yes, although the texture will be softer and less flaky than puff pastry.

5. Can I serve these cold?

Yes. They’re delicious warm, at room temperature, or chilled, although the pastry is crispiest when freshly baked.

6. Why did my pastry turn soggy?

Usually this happens because the spinach wasn’t squeezed dry enough or the filling contained too much moisture.

7. Can I use fresh herbs?

Absolutely. Parsley, dill, basil, or oregano all work beautifully.

8. Can I make them without feta?

Yes. Try ricotta, goat cheese, or additional cream cheese, although the flavor will be milder.

9. How do I make the pastry extra crispy?

Keep the puff pastry cold, avoid overfilling, and make sure your oven is fully preheated before baking.

10. Can I make mini versions?

Yes. Cut smaller pastry squares and use a mini muffin pan. Reduce the baking time and watch them closely.
