Ingredients

Chicken

  • 4 boneless or bone-in chicken thighs
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika

 Method

1. Season the Chicken

Pat the chicken thighs dry with paper towels.

Season both sides with salt, black pepper, paprika, garlic powder, thyme, and rosemary.

2. Brown the Chicken

Heat olive oil in a large skillet over medium-high heat.

Sear the chicken for 2–3 minutes per side, just until golden brown. You don’t need to cook it through at this stage.

3. Prepare the Slow Cooker

Place about half of the sliced onions on the bottom of the slow cooker.

Add half of the apple wedges and minced garlic.

Place the browned chicken thighs on top.

4. Add the Remaining Ingredients

Arrange the remaining onions and apples around and over the chicken.

In a bowl, whisk together the chicken broth, apple cider vinegar, Dijon mustard, honey, Worcestershire sauce, thyme, and black pepper.

Pour the mixture over everything.

5. Slow Cook

Cover and cook:

  • LOW: 4–5 hours
  • HIGH: 2½–3 hours

Cook until the chicken is tender and reaches a safe internal temperature of 165°F (74°C).

6. Finish the Sauce

For a richer sauce, remove the chicken and transfer the cooking liquid to a small saucepan.

Simmer for 5–8 minutes to reduce slightly. Stir in 1 tablespoon butter if desired.

7. Serve

Return the chicken to the slow cooker or serving dish.

Spoon the soft apples, onions, and sauce generously over the chicken.

Garnish with fresh parsley or thyme.

  • Use firm, slightly sweet apples such as Honeycrisp, Gala, or Pink Lady so they hold their shape better.
  • Bone-in chicken thighs usually give the dish extra flavor.

  • If you prefer a sweeter dish, increase the honey to 2 tablespoons.
