A delicious one-pan side dish featuring golden mushrooms and tender-crisp cauliflower sautéed in garlic butter, herbs, and Parmesan. It’s quick, savory, and perfect alongside chicken, steak, shrimp, or fish.

  • 1 medium head cauliflower, cut into small florets
  • 8 oz (225 g) mushrooms, sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 5 cloves garlic, minced
  • ½ small onion, thinly sliced
  • ½ tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes, optional
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh lemon juice

Optional

  • 1 tsp fresh thyme
  • 1 tbsp chopped green onions
  • Extra Parmesan for serving

Instructions

1. Prepare the Cauliflower

Wash and dry the cauliflower thoroughly.

Cut it into small, evenly sized florets so everything cooks at the same rate.

Pat the florets dry—this helps them brown instead of becoming watery.


2. Sauté the Cauliflower

Heat a large skillet over medium-high heat.

Add the olive oil and 1 tablespoon of butter.

Add the cauliflower florets.

Season with:

  • Smoked paprika
  • Salt
  • Black pepper

Cook for 6–8 minutes, stirring occasionally, until the cauliflower develops golden-brown edges.

If the florets are still too firm, add 2 tablespoons of water, cover the skillet, and steam for 2–3 minutes.

Transfer the cauliflower to a plate.


3. Brown the Mushrooms

Return the skillet to medium-high heat.

Add another tablespoon of butter.

Add the sliced mushrooms in a single layer if possible.

Cook for approximately 5–7 minutes, stirring occasionally.

Allow the mushrooms to release their moisture and become nicely browned.

Tip: Don’t constantly stir the mushrooms. Let them sit against the hot skillet so they can develop a golden color.


4. Add the Onion

Add the sliced onion to the mushrooms.

Cook for another 2–3 minutes, until the onion softens and becomes lightly golden.


5. Add the Garlic Butter

Reduce the heat to medium.

Add the remaining tablespoon of butter.

Add the minced garlic and Italian seasoning.

Cook for approximately 30–60 seconds, stirring constantly.

Be careful not to burn the garlic.


6. Combine Everything

Return the cooked cauliflower to the skillet.

Add the red pepper flakes and fresh thyme if using.

Toss everything together and cook for another 2–3 minutes so the garlic butter coats the cauliflower and mushrooms.


7. Add Parmesan & Lemon

Turn the heat to low.

Sprinkle the Parmesan over the vegetables.

Toss gently until the cheese melts slightly and coats the mushrooms and cauliflower.

Finish with fresh lemon juice and chopped parsley.

Taste and adjust salt and pepper.


 Serving

Serve immediately while hot.

  • A small squeeze of lemon

Creamy: Add 2–3 tbsp heavy cream after the garlic and simmer briefly.

Spicy: Add extra red pepper flakes or a little chili garlic sauce.

Extra cheesy: Add mozzarella along with the Parmesan and cover for 1–2 minutes until melted.

Refrigerate leftovers in an airtight container for up to 3–4 days.
