Time
- Prep: 15 minutes
- Cook: 5–6 hours on LOW
- Total: about 5½–6¼ hours
Ingredients
Main ingredients
- 1½ lb (680 g) baby Yukon Gold or red potatoes, halved
- 1 lb (450 g) smoked sausage or kielbasa, cut into ½-inch pieces
- 4 cups (about 450–500 g) fresh green beans, trimmed and cut into 2-inch pieces
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 cup (240 ml) chicken broth
- 4 tbsp unsalted butter
Seasoning
- 1 tsp Italian seasoning
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp black pepper
- ½ tsp salt, or to taste
- ¼ tsp red pepper flakes, optional
- 2 tbsp fresh parsley, chopped, optional
Method
1. Prepare the vegetables
Wash the potatoes and cut them into halves. Trim the green beans and cut them into bite-size pieces. Dice the onion and mince the garlic.
2. Layer the slow cooker
Place the potatoes in the bottom of the slow cooker. Add the onion and garlic, followed by the sliced sausage and green beans.
3. Season
Sprinkle Italian seasoning, paprika, garlic powder, onion powder, black pepper, salt and optional red pepper flakes over everything.
4. Add broth and butter
Pour the chicken broth evenly around the ingredients. Cut the butter into small pieces and distribute it over the top.
5. Slow cook
Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the potatoes are fork-tender. Similar recipes use these cooking ranges.
6. Stir gently
Once cooked, gently stir everything together so the buttery seasoned juices coat the potatoes, sausage and beans.
7. Garnish and serve
Sprinkle with fresh parsley and serve hot with dinner rolls, biscuits or a simple salad.
Food Safety
If using fully cooked smoked sausage/kielbasa, heat it thoroughly until steaming hot. If using raw sausage instead, cook it to 160°F/71°C for pork/beef sausage or 165°F/74°C for poultry sausage. Potatoes should be completely tender before serving.
