Garlic, finely minced
1 clove
Dijon mustard (optional)
1 tsp
Dried oregano
½ tsp
Salt
¼ tsp, or to taste
Black pepper
¼ tsp
Honey (optional)
½ tsp
2. Detailed preparation method
Step 1: Prepare the chickpeas
Drain the canned chickpeas using a colander.
Rinse them under clean, cool running water.
Allow the excess water to drain completely.
Pat dry with a clean kitchen towel if needed.
Important: Dry chickpeas help prevent the salad from becoming watery and allow the dressing to coat them evenly.
Step 2: Prepare the vegetables
Wash the cucumber and tomatoes thoroughly.
Cut the cucumber into small cubes.
Dice the tomatoes into similar-sized pieces.
Thinly slice the red onion.
Dice the bell pepper if using.
Finely chop the parsley and optional mint or dill.
For meal prep, remove excess liquid from particularly juicy tomatoes before mixing.
Step 3: Prepare the dressing
Add olive oil and lemon juice to a small bowl.
Add the minced garlic, oregano, salt and black pepper.
Add Dijon mustard for extra flavor and a smoother dressing.
Add honey if you prefer a slightly less acidic taste.
Whisk for 30–60 seconds until combined.
Taste and adjust the lemon juice, salt or pepper as needed.
Step 4: Combine the salad
Place the chickpeas in a large mixing bowl.
Add the cucumber, tomatoes, red onion and bell pepper.
Sprinkle in the fresh parsley and optional herbs.
Pour the dressing over the ingredients.
Toss gently until everything is evenly coated.
Step 5: Add the feta cheese
Crumble the feta cheese into small pieces.
Add it to the salad after mixing in the dressing.
Fold gently to prevent the feta from breaking down too much.
Taste and adjust the seasoning.
If the feta is particularly salty, reduce the added salt in the dressing.
Step 6: Chill and serve
Refrigerate for 15–30 minutes if you want the flavors to develop.
Toss gently before serving.
Divide into individual portions or clean, airtight meal-prep containers.
For the freshest texture, keep the dressing separate and mix it into each portion just before eating.

5. Storage and food safety
Refrigerator: Keep in an airtight container at or below 4°C (40°F).
Storage duration: Consume within 3–4 days.
Best quality: Store dressing separately for crisp vegetables and a fresher taste.
Freezing: Not recommended because cucumber and tomatoes become soft and watery.
Room temperature: Refrigerate within 2 hours, or within 1 hour when temperatures exceed 32°C (90°F).
Meal prep: Use clean containers and utensils, and avoid mixing fresh ingredients with utensils that have touched raw foods.
6. Recipe variations
Vegan version: Omit the feta or replace it with a suitable dairy-free alternative. Skip the honey or use a little maple syrup.
Higher-protein version: Add more chickpeas or serve with grilled chicken, tofu or boiled eggs.
Lower-sodium version: Choose no-added-salt chickpeas, rinse them thoroughly, reduce the feta and use less salt.
Gluten-free version: The basic salad is naturally gluten-free when all packaged ingredients are verified gluten-free.
Extra Mediterranean flavor: Add chopped olives, a pinch of sumac or a little extra fresh lemon juice.
