Ingredients
Vegetables
-
2 cups broccoli florets
-
2 cups sliced mushrooms (button, cremini, or shiitake)
-
1 large carrot, thinly sliced
-
3 garlic cloves, minced
-
2 green onions, sliced
-
1 tablespoon fresh ginger, grated (optional)
-
2 tablespoons cooking oil
-
1 teaspoon sesame seeds (optional)
Garlic Soy Sauce
-
3 tablespoons soy sauce
-
1 tablespoon oyster sauce (optional)
-
1 tablespoon honey or brown sugar
-
½ cup vegetable broth or water
-
1 teaspoon sesame oil
-
1 teaspoon cornstarch
-
1 tablespoon cold water
-
¼ teaspoon black pepper
-
A pinch of red pepper flakes (optional)
Instructions
Step 1: Prepare the Vegetables
Wash the broccoli and cut it into bite-sized florets. Slice the mushrooms and carrots evenly. Mince the garlic, grate the ginger if using, and slice the green onions.
Step 2: Mix the Sauce
In a small bowl, combine soy sauce, oyster sauce if using, honey, vegetable broth, sesame oil, and black pepper.
In another small bowl, mix the cornstarch with cold water until smooth. Keep both mixtures ready.
Step 3: Cook the Broccoli and Carrots
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
Add the broccoli and carrots. Stir-fry for 3–4 minutes. Add 2 tablespoons of water and cover for 1–2 minutes to soften the vegetables slightly while keeping them bright and crisp.
Transfer to a plate.
Step 4: Sauté the Mushrooms
Add the remaining oil to the same pan. Add the mushrooms and cook for 4–6 minutes, stirring occasionally, until tender and golden.
Let excess moisture evaporate so the mushrooms develop a rich, savory flavor.
Step 5: Add Garlic and Ginger
Add the minced garlic and grated ginger. Stir-fry for about 30–45 seconds until fragrant. Avoid burning the garlic.
Return the broccoli and carrots to the pan and toss everything together.
Step 6: Add the Sauce
Pour the soy sauce mixture into the skillet. Toss the vegetables for 1–2 minutes.
Stir the cornstarch slurry again and pour it into the pan gradually. Cook for another 1–2 minutes until the sauce thickens and coats the vegetables with a glossy finish.
Step 7: Garnish and Serve
Turn off the heat. Sprinkle with sliced green onions, sesame seeds, and red pepper flakes if desired.
Serve immediately over steamed rice, noodles, or quinoa.
Nut Information and Allergens
Is this recipe nut-free?
The main vegetables are naturally free of peanuts and tree nuts, but the complete recipe requires checking packaged ingredients and possible cross-contact warnings.

How to Make It Nut-Free
-
Use cooking oil verified suitable for the person with the allergy.
-
Check the soy sauce, broth, and oyster sauce labels.
-
Omit sesame oil and sesame seeds if sesame is also an allergen.
-
Use clean cookware and utensils to prevent cross-contact.
For a severe nut allergy, verify every product with its manufacturer rather than assuming it is safe based on the ingredient list alone.
Tips for the Best Stir-Fry
-
Use high heat to brown the mushrooms without making them soggy.
-
Cut vegetables evenly so they cook at the same rate.
-
Add the sauce near the end to keep the vegetables crisp.
-
For extra protein, add cooked chicken, tofu, or shrimp.
-
For a spicier version, add chili garlic sauce or fresh sliced chilies.

-
Refrigerator: Store in an airtight container for 3–4 days.
-
Freezer: Freeze for up to 2 months, although the vegetables may soften after thawing.
