Ingredients

For the Chicken

  • 8 chicken drumsticks (about 2½–3 lb)

  • ¾ cup BBQ sauce

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon paprika

  • ½ teaspoon black pepper

  • ½ teaspoon salt, or to taste

  • ½ teaspoon chili powder (optional)

  • 1 tablespoon brown sugar (optional, for extra sweetness)

For Serving

  • French fries

  • Fresh green salad

  • Cherry tomatoes

  • Extra BBQ sauce, served separately

Instructions

Step 1: Prepare the chicken

Preheat the oven to 425°F (220°C). Pat the chicken drumsticks dry with paper towels. This helps the skin brown better.

Step 2: Make the seasoning mixture

In a bowl, mix olive oil, garlic powder, onion powder, paprika, black pepper, salt, and chili powder. Add brown sugar if you prefer a sweeter flavor.

Step 3: Season and marinate

Rub the seasoning mixture over all sides of the drumsticks. For extra flavor, cover and refrigerate for 30 minutes to 2 hours. If short on time, bake immediately.

Step 4: Arrange on a baking tray

Place the drumsticks on a foil-lined baking sheet, leaving space between them. A wire rack on the tray can help the skin brown more evenly.

Step 5: Bake the chicken

Bake for 20 minutes, turn the drumsticks, then bake for another 15 minutes.

Step 6: Add BBQ sauce

Brush the drumsticks generously with BBQ sauce. Return them to the oven for another 10–15 minutes, until the sauce becomes sticky and caramelized.

Step 7: Check that they are cooked

The thickest part of each drumstick should reach at least 165°F (74°C) on a food thermometer, without touching the bone. Let the chicken rest for 5 minutes before serving.

Step 8: Serve

Arrange the glossy BBQ chicken on a plate with French fries and fresh salad. Add extra sauce on the side.

Q/S — Questions & Tips

Q: Can I use chicken thighs instead? Yes. Bone-in thighs work well, but cooking time may vary with their size.

Q: Can I make this recipe spicy? Yes. Add extra chili powder, cayenne pepper, or hot sauce.

Q: How do I get a sticky, glossy coating? Apply the BBQ sauce during the final 10–15 minutes so it caramelizes without burning.

Q: Can I cook these in an air fryer? Yes. Cook at around 380°F (193°C), turning halfway through, then brush with BBQ sauce near the end. Continue until the chicken reaches 165°F (74°C).

Q: How do I store leftovers? Refrigerate within two hours in an airtight container and eat within 3–4 days. Reheat thoroughly.

Q: Can I freeze cooked chicken? Yes. Cool it, store in a freezer-safe container, and thaw in the refrigerator before reheating.

Chef’s Tip: For the best result, pat the drumsticks dry and add most of the BBQ sauce near the end of baking. This helps the chicken brown and gives it that delicious sticky finish.
