1. Ingredients

For the beef ribs

  • 3–4 lb (1.4–1.8 kg) bone-in beef short ribs

  • 1 medium onion, finely chopped

  • 4 garlic cloves, minced

  • 1 tbsp olive oil

  • ½ tsp salt, or to taste

  • 1 tsp black pepper

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

For the BBQ sauce

  • 1 cup (240 g) barbecue sauce

  • 2 tbsp Worcestershire sauce

  • 2 tbsp brown sugar

  • 2 tbsp tomato paste

  • 1 tbsp apple cider vinegar

  • ½ cup (120 ml) beef broth

  • 1 tsp Dijon mustard, optional

  • ½ tsp chili powder, optional

2. Full cooking instructions

Step 1 — Season the ribs

Pat the beef ribs dry with paper towels. Mix the salt, black pepper, smoked paprika, garlic powder, and onion powder. Rub the seasoning over all sides of the ribs.

Step 2 — Sear the beef

Heat the olive oil in a large skillet over medium-high heat. Brown the ribs for about 2–3 minutes per side. Work in batches if necessary.

Searing adds a deep roasted flavor and helps develop the dark, caramelized appearance shown in your photo.

Step 3 — Prepare the sauce

In a bowl, whisk together the barbecue sauce, Worcestershire sauce, brown sugar, tomato paste, apple cider vinegar, beef broth, and optional Dijon mustard and chili powder.

Taste the sauce and adjust the sweetness or tanginess as desired.

Step 4 — Load the slow cooker

Scatter the chopped onion and minced garlic over the bottom of the slow cooker. Arrange the ribs on top, preferably in a single layer when possible.

Pour the sauce over the ribs, turning them gently to coat all sides.

Step 5 — Slow cook until tender

Cover and cook:

  • LOW: 7–8 hours

  • HIGH: 4–5 hours

Cooking time varies with the size of the ribs and your slow cooker. They are ready when the meat is very tender and pulls away from the bones easily. For the best texture, avoid stopping before the connective tissue has softened.

Step 6 — Thicken the sauce

Carefully transfer the ribs to a serving dish. Skim excess fat from the cooking liquid.

Pour the sauce into a saucepan and simmer uncovered for 5–10 minutes until thick and glossy. Alternatively, use your slow cooker’s HIGH setting with the lid off, if suitable for your model.

For a thicker sauce, mix 1 tbsp cornstarch with 1 tbsp cold water and whisk it into the simmering sauce.

Step 7 — Glaze the ribs

Return the ribs to the thickened sauce and spoon it generously over the meat.

For extra caramelization, brush the ribs with sauce and broil for 2–3 minutes, watching carefully to prevent burning.

Step 8 — Serve

Arrange the ribs on a warm platter and pour the remaining BBQ sauce over them. Garnish with chopped parsley if desired.

Serve with mashed potatoes, corn on the cob, coleslaw, roasted vegetables, or buttered rice.

4. Nut information and allergens

  • Nuts: No peanuts or tree nuts are included in the recipe as written.

  • Potential allergens: Worcestershire sauce, barbecue sauce, mustard, and beef broth may contain soy, wheat, mustard, or other allergens depending on the brand.

  • For nut allergies: Check product labels and cross-contact warnings, and use clean preparation equipment.

5. Tips for the best results

  • Choose meaty, bone-in short ribs for a rich, tender result.

  • Sear the ribs before slow cooking for deeper flavor.

  • Avoid adding too much broth; the ribs release moisture as they cook.

  • If the sauce tastes too sweet, add a little extra apple cider vinegar.

  • If the sauce tastes too tangy, stir in a little brown sugar.

  • Skim the fat before thickening the sauce for a less greasy finish.

6. Storage and reheating

  • Refrigerate leftovers within 2 hours in an airtight container.

  • Store in the refrigerator for 3–4 days.

  • Freeze with the sauce for up to 2–3 months for best quality.

  • Reheat gently in a covered saucepan or oven with a little extra broth or sauce, until the center reaches 165°F (74°C).

Serving suggestion: Pair these sticky BBQ beef ribs with creamy mashed potatoes and buttery green beans to make a comforting, restaurant-style dinner at home.
