Ingredients

  • 2 large flour tortillas

  • 4 large eggs

  • ½ cup diced ham

  • 1 cup shredded cheddar cheese

  • 1 tablespoon butter

  • 2 tablespoons milk (optional, for softer scrambled eggs)

  • ¼ teaspoon salt, or to taste

  • ¼ teaspoon black pepper

  • ¼ teaspoon garlic powder (optional)

  • 1 tablespoon chopped fresh parsley or chives (optional)

Instructions

1. Prepare the eggs: Crack the eggs into a bowl. Add milk, salt, black pepper, and garlic powder. Whisk until thoroughly combined.

2. Cook the scrambled eggs: Heat half the butter in a nonstick skillet over medium-low heat. Pour in the eggs and gently stir with a spatula until softly scrambled and just set, about 3–4 minutes. Transfer to a plate.

3. Prepare the ham: Add the diced ham to the skillet and cook for 1–2 minutes until warmed and lightly browned. Remove from the skillet.

4. Fill the tortillas: Place a tortilla on a clean surface. Spread half the shredded cheddar over one half of the tortilla. Add half the scrambled eggs and ham, then sprinkle with a little more cheese. Fold the tortilla in half. Repeat with the second tortilla.

5. Cook the quesadillas: Melt the remaining butter in a skillet over medium heat. Place the folded tortillas in the pan and cook for 2–3 minutes per side, pressing gently with a spatula, until golden brown and the cheese melts.

6. Rest and slice: Transfer to a cutting board and rest for 1 minute. Cut each quesadilla into three or four wedges.

7. Serve: Sprinkle with chopped parsley or chives. Serve warm with salsa, sour cream, or your favorite breakfast sauce.

  • Keep the heat at medium to prevent the tortillas from burning before the cheese melts.

  • For extra flavor, add diced bell peppers, sautéed onions, spinach, or a pinch of smoked paprika.
