Instructions
Step 1: Prepare the beef
Pat the chuck roast dry with paper towels. Season all sides with salt, black pepper, garlic powder, onion powder, and paprika.

For deeper flavor, heat the olive oil in a skillet over medium-high heat. Sear the beef for 3–4 minutes per side until browned. This step is optional but adds a richer roasted flavor.
Step 2: Prepare the onions
Peel and thinly slice the onions. If you have time, cook them in the same skillet over medium heat for 10–15 minutes until softened and lightly golden. Add the minced garlic during the final minute.

Transfer the onions and garlic to the bottom of the slow cooker.
Step 3: Add the beef and seasonings
Place the seasoned beef on top of the onions. Sprinkle the dried thyme and crispy fried onions over the beef.

In a separate bowl, whisk together the beef broth, Worcestershire sauce, and optional soy sauce. Pour the mixture around the beef.

The liquid should partially surround the roast; it does not need to cover it completely.
Step 4: Slow cook until tender
Cover the slow cooker with its lid.
– LOW: Cook for 8–9 hours.
– HIGH: Cook for approximately 4–5 hours.
Cooking times vary depending on the roast’s size and your slow cooker. The beef is ready when it is fork-tender and easily pulls apart. For the best shredded texture, allow it to cook until the connective tissue has softened fully.
Step 5: Shred the beef
Transfer the cooked beef to a large plate or cutting board. Use two forks to pull it into strands.

Return the shredded beef to the slow cooker and toss it thoroughly with the cooked onions and flavorful broth. Taste and adjust the salt, pepper, and Worcestershire sauce as needed.

If the gravy is too thin, transfer some liquid to a saucepan and simmer it until slightly reduced, or stir in a small cornstarch slurry and cook until thickened.
Step 6: Add the cheese
Spread the shredded beef and onions evenly in the slow cooker. Sprinkle the mozzarella and Swiss or provolone cheese over the top, followed by the Parmesan if using.

Cover and cook on HIGH for approximately 10–20 minutes, or until the cheese is completely melted and bubbly.

For a browned, golden cheese topping, transfer the beef to an oven-safe dish and broil briefly. Use oven-safe cookware and supervise closely.
Step 7: Garnish and serve
Sprinkle freshly chopped parsley over the melted cheese. Serve the beef hot with plenty of onion gravy.

It is delicious over mashed potatoes, rice, egg noodles, or toasted crusty bread. You can also pile it into sandwich rolls for French onion beef sandwiches.

Helpful Tips for the Best Results
1. Choose chuck roast: Its connective tissue breaks down during slow cooking, giving you tender, juicy shredded beef.
2. Do not add too much liquid: The beef and onions release moisture as they cook.
3. Use two cheeses: Mozzarella provides stretch, while Swiss or provolone gives a classic French onion flavor.
4. Add cheese at the end: This prevents the topping from becoming overcooked during the long cooking period.
5. Store leftovers safely: Refrigerate within two hours in an airtight container and use within 3–4 days. Reheat thoroughly to 165°F (74°C).
Serving idea: Pair this cheesy French onion beef with roasted potatoes and green beans, or serve it on toasted bread for a hearty, restaurant-style dinner.
