For the bread:
– 1 French baguette
– 3 tablespoons olive oil
– 2 cloves garlic, peeled
– ¼ teaspoon salt
– ¼ teaspoon black pepper
For the tomato topping:
– 3 medium ripe tomatoes, diced
– 1 cup fresh mozzarella cheese, cubed
– ¼ cup fresh basil leaves, chopped
– 2 cloves garlic, finely minced
– 2 tablespoons extra virgin olive oil
– 1 tablespoon balsamic vinegar
– ½ teaspoon salt
– ¼ teaspoon black pepper
– 1 teaspoon Italian seasoning (optional)
For finishing:
– 2 tablespoons balsamic glaze
– Extra fresh basil leaves
– A little grated Parmesan cheese (optional)
– Extra virgin olive oil for drizzling
Step-by-Step Instructions
Step 1: Prepare the baguette
Preheat your oven to 400°F (200°C).
Slice the French baguette diagonally into approximately ½-inch thick slices.
Arrange the slices in a single layer on a baking sheet.
Step 2: Season the bread
Brush both sides of each bread slice lightly with olive oil.
Arrange them evenly on the baking sheet.
Step 3: Toast until golden
Bake for approximately 5–8 minutes, turning halfway through, until the bread becomes lightly golden and crispy.
For extra flavor, toast under the broiler for 1–2 minutes, watching carefully to prevent burning.
Step 4: Add garlic flavor
Remove the toasted bread from the oven.
While still warm, gently rub one peeled garlic clove over the surface of each slice.
This gives the bread a wonderful Italian garlic flavor.
Step 5: Prepare the tomatoes
Wash the tomatoes and remove excess seeds and watery pulp if desired.
Cut the tomatoes into small cubes.
Place them in a medium mixing bowl.
Step 6: Add mozzarella cheese
Cut fresh mozzarella into small cubes.
Add the mozzarella to the diced tomatoes.
Mix gently to avoid crushing the cheese.
Step 7: Add fresh basil and garlic
Finely chop the fresh basil leaves.
Add chopped basil and minced garlic to the tomato and mozzarella mixture.
Stir gently.
Step 8: Prepare the dressing
Add olive oil, balsamic vinegar, salt, black pepper, and Italian seasoning.
Mix until all the ingredients are evenly coated.
Allow the mixture to rest for approximately 5–10 minutes so the flavors combine.
Step 9: Assemble the bruschetta
Arrange the toasted baguette slices on a serving platter.
Spoon generous portions of the tomato, basil, and mozzarella mixture onto each slice.
Spread the topping evenly.
Step 10: Add balsamic glaze
Drizzle balsamic glaze over the assembled bruschetta.
Add a little extra olive oil if desired.
Step 11: Garnish and serve
Finish with fresh basil leaves and a sprinkle of Parmesan cheese.
Serve immediately while the bread is crispy and the topping is fresh.
Enjoy your delicious homemade Italian bruschetta!
