Ingredients

Ingredient

Quantity

Whole almonds

1 cup

Rolled oats

½ cup

Dried cranberries

¼ cup

Honey

2 tablespoons

Vanilla extract

1 teaspoon

Salt

1 small pinch (optional)

Cinnamon powder

¼ teaspoon (optional)

Instructions – Step by Step

Step 1: Prepare the almonds

  1. Preheat your oven to 170°C (340°F).

  2. Spread the almonds on a baking tray.

  3. Roast for approximately 7–9 minutes until lightly golden and fragrant.

  4. Allow them to cool slightly.

  5. Roughly chop half of the almonds and leave the remaining half whole or slice them.

Tip: Roasting the almonds enhances their natural nutty flavor and gives the bars a wonderful crunch.

Step 2: Prepare the oats

  1. Place the rolled oats in a dry frying pan.

  2. Toast over low heat for 2–3 minutes.

  3. Stir continuously to prevent burning.

  4. Remove from the heat and allow to cool.

Step 3: Prepare the cranberries

  1. Chop the dried cranberries into smaller pieces.

  2. If they are very dry or hard, soak them in warm water for 5 minutes.

  3. Drain thoroughly and pat dry with a kitchen towel.

Step 4: Combine the dry ingredients

In a large mixing bowl, add:

  • 1 cup roasted almonds

  • ½ cup toasted oats

  • ¼ cup dried cranberries

  • A pinch of salt

  • ¼ teaspoon cinnamon (optional)

Mix everything until evenly distributed.

Step 5: Prepare the honey mixture

  1. Add 2 tablespoons of honey to a small saucepan.

  2. Warm gently over low heat for 30–60 seconds.

  3. Remove from the heat.

  4. Add 1 teaspoon vanilla extract.

  5. Stir well.

Do not boil the honey. You only need to warm it enough to make it easier to mix.

Step 6: Combine everything

  1. Pour the warm honey mixture over the almond, oat, and cranberry mixture.

  2. Stir thoroughly with a sturdy spoon.

  3. Make sure all the ingredients are lightly coated with honey.

  4. The mixture should stick together when pressed between your fingers.

Important: If the mixture seems too dry and crumbly, add another ½–1 tablespoon of honey.

Step 7: Shape the bars

  1. Line a small square baking pan (approximately 8 × 8 inches) with parchment paper.

  2. Transfer the mixture into the prepared pan.

  3. Spread evenly.

  4. Press down firmly using the back of a spoon or the bottom of a glass.

  5. Pay special attention to the corners and edges.

The firmer you press, the better the bars will hold together.

Step 8: Bake the bars

  1. Preheat the oven to 160°C (320°F).

  2. Bake for approximately 10–12 minutes.

  3. The edges should become lightly golden.

  4. Remove from the oven and allow to cool completely in the pan.

Avoid overbaking, as the bars can become too hard.

Step 9: Chill and cut

  1. Once completely cooled, refrigerate the pan for 30–60 minutes.

  2. Lift the mixture out using the parchment paper.

  3. Place it on a cutting board.

  4. Use a sharp knife to cut into rectangular bars or squares.

Tips for Perfect Almond Cranberry Bars

  • For extra crunch: Add 2 tablespoons of pumpkin or sunflower seeds.

  • For chocolate flavor: Add 2 tablespoons of dark chocolate chips after the mixture cools slightly.

  • For extra sweetness: Add 1 tablespoon of honey.

  • For more flavor: Add a little orange zest.

  • For a softer texture: Chop the almonds more finely.

  • For better binding: Press the mixture firmly into the pan.
