Drain excess grease.
-
Add garlic powder, onion powder, paprika, and black pepper.
-
Stir well and set aside.
Step 2: Prepare the Creamy Sauce
-
In a mixing bowl, combine cream of mushroom soup and milk.
-
Add beef broth and ranch seasoning.
-
Mix until smooth.
-
Add Italian seasoning and stir.
-
Cut cream cheese into small cubes.
Step 3: Assemble the Crockpot
-
Add the cooked ground beef to the slow cooker.
-
Add the cheese tortellini.

Step 4: Slow Cook
-
Cook on LOW for approximately 2–3 hours.
-
Check the tortellini after about 1½–2 hours.
-
Stir gently once or twice.
-
Avoid overcooking because tortellini can become too soft.
Cooking times vary by slow cooker. Add the tortellini during the final 30–45 minutes if using fresh tortellini or if you prefer a firmer texture.
Step 5: Add Cheese and Spinach
-
Add fresh spinach during the final 10–15 minutes.
-
Sprinkle shredded cheddar cheese over the mixture.
-
Stir gently until the spinach wilts and cheese melts.
-
Allow the sauce to thicken slightly.
-
Taste and adjust salt and pepper.
Step 6: Serve
Spoon the creamy beef tortellini into serving bowls.
Garnish with fresh parsley, extra cheddar cheese, and optional crispy bacon.
Serve hot and enjoy!
