Ingredients
For the chicken casserole:
-
2 lbs (900 g) boneless, skinless chicken breasts, cut into bite-sized pieces
-
1 cup chicken broth
-
1½ cups shredded cheddar cheese
-
½ cup cooked bacon bits, crumbled
-
½ cup grated Parmesan cheese
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1 teaspoon ranch seasoning
-
½ teaspoon Italian seasoning
-
½ teaspoon black pepper
-
½ teaspoon salt, or to taste
For the biscuit topping:
-
1 can refrigerated biscuit dough (8 biscuits)
-
½ cup additional shredded cheddar cheese
-
2 tablespoons melted butter
-
¼ teaspoon garlic powder
-
1 tablespoon chopped fresh parsley
Instructions
Step 1: Prepare the chicken
Cut chicken breasts into evenly sized bite-sized pieces. Pat dry and place them in the slow cooker.
Step 2: Add seasonings
Sprinkle garlic powder, onion powder, ranch seasoning, Italian seasoning, black pepper, and salt over the chicken. Mix gently.
Step 3: Add the cheese and bacon
Add shredded cheddar cheese, Parmesan cheese, and cooked bacon bits. Pour in the chicken broth and stir everything together.
Step 4: Slow cook
Cover and cook on LOW for 3–4 hours or until the chicken reaches an internal temperature of 165°F (74°C). Cooking time depends on the size of the chicken pieces and your slow cooker.
Step 5: Prepare the biscuits
Cut refrigerated biscuit dough into quarters. Arrange the biscuit pieces over the cooked chicken mixture in an even layer.
Step 6: Cook the biscuit topping
Cover and cook on HIGH for approximately 45–75 minutes, checking that the biscuit pieces are fully cooked in the center. Avoid lifting the lid unnecessarily.
Step 7: Add the finishing touches
Brush the cooked biscuits with melted butter mixed with garlic powder. Sprinkle additional cheddar cheese and fresh parsley over the top.
Step 8: Serve
Allow the casserole to rest for 5 minutes. Spoon the creamy chicken, bacon, cheese, and golden biscuits into bowls. Serve warm!
