Slow Cooker Chicken Stew Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 6 medium carrots, peeled and sliced
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for sautéing the garlic and onions)
  • 2 tablespoons cornstarch (optional, for thickening)

Instructions:

  1. Prep Ingredients:

    • Dice the potatoes and slice the carrots.
    • Chop the onion and mince the garlic.
    • If you want a thicker stew, make a slurry by mixing 2 tablespoons of cornstarch with 2 tablespoons of water.
  2. Sauté Onion and Garlic (Optional):

    • In a small pan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes until softened. This step adds flavor but can be skipped if you prefer a hands-off method.
  3. Add to Slow Cooker:

    • Place the chicken breasts, carrots, potatoes, peas, thyme, rosemary, and sautéed onions and garlic (if using) in the slow cooker.
    • Pour the chicken broth over the ingredients and season with salt and pepper.
  4. Cook:

    • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
  5. Shred Chicken:

    • Remove the chicken breasts from the slow cooker and shred them with two forks. Return the shredded chicken to the stew and stir everything together. If you want to thicken the stew, add the cornstarch slurry and stir until combined.
  6. Serve:

    • Taste and adjust seasoning as necessary before serving.
