UKA Minty vanilla shake

Ingredients

Plain unsweetened almond milk

½ cups

Fresh mint leaves

4 leaf/leaves, divided

Halo Top Vanilla bean light ice cream

⅔ cups, or similar product

Uncooked cauliflower rice

⅔ cups, frozen unseasoned

Food coloring

3 drops, green, plant-based

Aerosol whipped cream

2 Tbsp

Instructions

  1. In a blender, blend almond milk and 3 mint leaves on high speed until mint is completely pureed, about 30 seconds. Add ice cream and cauliflower rice and blend until smooth and creamy, about 1 minute. Blend in food coloring, if desired. Pour into a glass; top with whipped cream and 1 mint leaf.
  2. Serving size: about 1 cup
