Instructions

Prep cucumbers
Thinly slice cucumber. Lightly sprinkle with salt and let sit for 5 minutes. Pat dry with paper towel to remove excess moisture. -
Make spread
In a bowl, mix cream cheese, mayonnaise (if using), lemon juice, salt, pepper, and herbs until smooth. -
Assemble
Lightly butter bread slices (optional). Spread cream cheese mixture evenly on each slice. -
Layer cucumbers
Arrange cucumber slices in a single layer. Add extra pepper if desired. -
Finish & cut
Top with remaining bread slices. Trim crusts if preferred and cut into triangles or fingers.
