📝 Ingredients (Makes 4 pizzas):

Base:

  • 8 small flour or corn tortillas

  • Cooking spray or oil for brushing

Filling:

  • ½ lb lean ground beef or ground turkey

  • 1 tablespoon taco seasoning

Sauce Layer:

  • ½ cup refried beans (fat-free preferred)

  • ½ cup enchilada sauce

Toppings:

  • 1 cup shredded reduced-fat Mexican-blend cheese

  • ¼ cup diced tomatoes

  • ¼ cup sliced black olives (optional)

  • 2 tablespoons chopped green onions

  1. Crisp tortillas:
    Lightly spray tortillas and bake at 400°F (200°C) for 5–7 minutes per side until golden and crispy. Set aside.
