CARROT APPLE ZUCCHINI BREAD

Ingredients:
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground ginger
– 1/2 cup unsalted butter, melted
– 1/2 cup granulated sugar
– 1/2 cup packed light brown sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup grated carrots (about 2 medium)
– 1 cup grated zucchini (about 1 medium)
– 1 cup grated apple (about 1 large)
– 1/2 cup chopped walnuts or pecans (optional)
Directions:
1. Preheat your oven to 350°F (175°C) and grab a 9×5-inch loaf pan to grease and flour.
2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. This will be your lovely dry mix.
3. In a large bowl, melt the unsalted butter, then stir in the granulated sugar and brown sugar. Mix until everything is combined and luscious.
