🧾 INGREDIENTS

Chicken & Broccoli

  • 1½ lb (680 g) boneless skinless chicken breasts

  • 4 cups broccoli florets

  • 1 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ½ tsp salt

  • ½ tsp dried oregano or Italian seasoning


Creamy Garlic Sauce

  • ½ cup plain Greek yogurt (nonfat or low-fat)

  • 2 tbsp light mayonnaise (or all yogurt for lower points)

  • 3 cloves garlic, minced

  • 1 tbsp lemon juice

  • ½ tsp Dijon mustard

  • Salt & pepper to taste

  • 2–3 tbsp water or milk (to thin)

👩‍🍳 INSTRUCTIONS

1️⃣ Marinate the Chicken

  1. Pat chicken dry and place in a bowl.

  2. Add olive oil (or spray), paprika, garlic powder, onion powder, oregano, salt, and pepper.

  3. Rub well to coat.

  4. Marinate 15–30 minutes (or up to 24 hours refrigerated).


2️⃣ Grill the Chicken

  1. Preheat grill or grill pan to medium-high heat.

  2. Grill chicken 6–7 minutes per side until cooked through (internal temp 165°F / 74°C).

  3. Remove and rest 5 minutes, then slice.

3️⃣ Cook the Broccoli

  1. Steam broccoli 4–5 minutes until bright green and tender-crisp

  2. Sauté in a pan with cooking spray, salt & pepper for 5–6 minutes
    OR

  3. Roast at 425°F (220°C) for 15 minutes


4️⃣ Make Creamy Garlic Sauce

  1. In a bowl, whisk Greek yogurt, light mayo, garlic, lemon juice, Dijon, salt, and pepper.

  2. Add water or milk a little at a time until drizzleable.

  3. Taste and adjust seasoning.


5️⃣ Assemble Bowls

  1. Add broccoli to each bowl.

  2. Top with sliced grilled chicken.

  3. Drizzle generously with creamy garlic sauce.

  4. Add optional toppings if using.
