Grilled Chicken with Fresh Veggie Plate
A colorful, nutritious, and delicious meal for a healthy lifestyle!
Ingredients:

2 boneless chicken thighs or breasts
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp dried oregano
Juice of 1/2 lemon
For the Fresh Veggie Plate:
1 cup broccoli florets
1/2 cup cooked beetroot, sliced
1/2 cucumber, sliced
1 medium tomato, sliced
4 lettuce leaves
For the Dressing:
1 tbsp olive oil
1 tbsp lemon juice
Salt & pepper to taste

Marinate the Chicken:
In a bowl, mix olive oil, garlic powder, salt, black pepper, paprika, oregano, and lemon juice.
Coat the chicken with the marinade and let it sit for 15 minutes.
Grill the Chicken:
Heat a pan over medium-high heat.
Cook the chicken for 5–6 minutes per side until golden and fully cooked.
Steam the Broccoli:
In a small pot, steam the broccoli for 3–4 minutes until slightly tender but still crunchy.
Assemble the Veggie Plate:
Arrange the sliced beets, cucumbers, tomatoes, lettuce, and steamed broccoli on a plate.
Drizzle with olive oil, lemon juice, and a pinch of salt & pepper.
Serve & Enjoy:
Plate the grilled chicken alongside the fresh veggies and enjoy a wholesome meal!
