Ingredients

Shrimp

  • 1½ lbs (700 g) large shrimp (16–20 count), peeled & deveined

  • Tails on or off—your call

Marinade

  • 3 tbsp olive oil

  • 2 tbsp fresh lemon juice (or lime)

  • 3 cloves garlic, minced

  • 1 tsp smoked paprika

  • ½ tsp chili flakes (optional heat)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp honey or brown sugar (balances flavor)

  • 1 tsp dried oregano or Italian seasoning

Optional Garnish

  • Fresh parsley or cilantro, chopped

  • Lemon wedges


Equipment

  • Metal skewers or wooden skewers (soaked in water 30 min)

  • Grill (gas, charcoal, or grill pan)


Instructions

1. Prepare the Marinade

In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, chili flakes, salt, pepper, honey, and oregano.

2. Marinate the Shrimp

Add shrimp to the bowl and toss until fully coated.
Cover and refrigerate 20–30 minutes (no longer—acid will overcook shrimp).

3. Skewer the Shrimp

Thread shrimp onto skewers:

  • Pierce twice (head and tail end) so they don’t spin

  • Leave a little space between each shrimp for even cooking

4. Preheat the Grill

  • Heat grill to medium-high (400–450°F / 205–230°C)

  • Clean grates and lightly oil them

5. Grill the Shrimp

Place skewers directly over heat.

  • Grill 2–3 minutes per side

  • Shrimp should turn pink, opaque, and lightly charred

  • Internal temp: 120–125°F (49–52°C)

⚠️ Don’t overcook—shrimp go rubbery fast.

6. Finish & Serve

Remove from grill, squeeze fresh lemon juice over top, garnish with herbs, and serve immediately.

🔥 Spicy Cajun

  • Add 1½ tsp Cajun seasoning

  • Skip oregano

🧄 Garlic Butter

  • Brush with melted garlic butter after grilling

🍍 Honey Lime

  • Swap lemon for lime

  • Add 1 tbsp extra honey

  • Add cumin + coriander

  • Finish with feta & tzatziki
