2 tbsp fresh lemon juice (or lime)

3 cloves garlic, minced

1 tsp smoked paprika

½ tsp chili flakes (optional heat)

1 tsp honey or brown sugar (balances flavor)

Instructions
1. Prepare the Marinade
In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, chili flakes, salt, pepper, honey, and oregano.
2. Marinate the Shrimp
Add shrimp to the bowl and toss until fully coated.
Cover and refrigerate 20–30 minutes (no longer—acid will overcook shrimp).
3. Skewer the Shrimp
Thread shrimp onto skewers:

Pierce twice (head and tail end) so they don’t spin

Leave a little space between each shrimp for even cooking
4. Preheat the Grill

Heat grill to medium-high (400–450°F / 205–230°C)

Clean grates and lightly oil them
5. Grill the Shrimp
Place skewers directly over heat.

Grill 2–3 minutes per side

Shrimp should turn pink, opaque, and lightly charred
-
Internal temp: 120–125°F (49–52°C)
⚠️ Don’t overcook—shrimp go rubbery fast.
6. Finish & Serve
Remove from grill, squeeze fresh lemon juice over top, garnish with herbs, and serve immediately.
