Instructions

Cook sweet potatoes: Heat oil in a large skillet over medium heat. Add diced sweet potatoes, season lightly with salt, and cook 8–10 minutes, stirring, until tender and lightly golden. Remove and set aside.

Brown turkey: In the same skillet, add ground turkey and onion. Cook 5–6 minutes until turkey is no longer pink.

Add aromatics: Stir in garlic, bell pepper, paprika, cumin, chili powder, salt, and pepper. Cook 1 minute until fragrant.

Combine: Return sweet potatoes to the skillet. Pour in broth, stir, cover, and simmer 5 minutes to meld flavors.

Finish: Fold in spinach/kale until just wilted. Taste and adjust seasoning.
