  • 1 lb (450 g) lean ground turkey

  • 2 medium sweet potatoes, peeled & diced small

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 red bell pepper, chopped

  • 1 tsp paprika

  • 1 tsp cumin

  • ½ tsp chili powder (optional)

  • Salt & black pepper, to taste

  • ½ cup chicken broth or water

  • 1 cup fresh spinach or kale

  • Optional garnish: parsley, green onions, or avocado


Instructions

  1. Cook sweet potatoes: Heat oil in a large skillet over medium heat. Add diced sweet potatoes, season lightly with salt, and cook 8–10 minutes, stirring, until tender and lightly golden. Remove and set aside.

  2. Brown turkey: In the same skillet, add ground turkey and onion. Cook 5–6 minutes until turkey is no longer pink.

  3. Add aromatics: Stir in garlic, bell pepper, paprika, cumin, chili powder, salt, and pepper. Cook 1 minute until fragrant.

  4. Combine: Return sweet potatoes to the skillet. Pour in broth, stir, cover, and simmer 5 minutes to meld flavors.

  5. Finish: Fold in spinach/kale until just wilted. Taste and adjust seasoning.

  6. Serve: Garnish as desired and enjoy warm.
