4 fish fillets (cod, tilapia, sea bass, haddock, or snapper)

1 cup cherry tomatoes, halved

½ cup sliced olives (black or Kalamata)

Instructions

Preheat oven to 400°F (200°C). Lightly grease a baking dish.

Season fish: Place fish fillets in the dish. Drizzle with olive oil, sprinkle with garlic, lemon zest, oregano, paprika, cumin, salt, and pepper.

Add toppings: Scatter tomatoes, olives, red onion, and capers around and over the fish.

Add lemon juice evenly over the dish.

Bake uncovered for 18–22 minutes, or until fish flakes easily with a fork.
