Ingredients

  • 4 fish fillets (cod, tilapia, sea bass, haddock, or snapper)

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 lemon (zest + juice)

  • 1 teaspoon dried oregano

  • ½ teaspoon paprika

  • ½ teaspoon ground cumin (optional)

  • Salt and black pepper, to taste

Vegetables & Toppings

  • 1 cup cherry tomatoes, halved

  • ½ cup sliced olives (black or Kalamata)

  • ¼ cup thinly sliced red onion

  • 2 tablespoons capers (optional)

  • 2 tablespoons fresh parsley or dill, chopped


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.

  2. Season fish: Place fish fillets in the dish. Drizzle with olive oil, sprinkle with garlic, lemon zest, oregano, paprika, cumin, salt, and pepper.

  3. Add toppings: Scatter tomatoes, olives, red onion, and capers around and over the fish.

  4. Add lemon juice evenly over the dish.

  5. Bake uncovered for 18–22 minutes, or until fish flakes easily with a fork.

  6. Garnish with fresh parsley or dill before serving.


Tips & Variations

  • Extra Mediterranean flavor: Add feta cheese in the last 5 minutes

  • Spicy kick: Add chili flakes

  • One-pan meal: Add zucchini or bell peppers

  • Juicy fish: Cover loosely with foil for first 10 minutes, then uncover
