🛒 Ingredients

Bok Choy

  • 4–5 heads baby bok choy (or 2 large), halved lengthwise

  • Cooking spray or 1 tsp sesame oil

Ginger Chili Sauce

  • 1 tbsp fresh ginger, grated

  • 1–2 cloves garlic, minced

  • 1 tbsp low-sodium soy sauce (or tamari)

  • 1 tsp chili garlic sauce or sambal oelek

  • 1 tsp rice vinegar or lime juice

  • ½ tsp honey or sugar substitute (optional)

  • 2 tbsp water


👩‍🍳 Instructions

1️⃣ Heat pan

  • Heat a skillet or wok over medium-high

  • Spray with cooking spray or add sesame oil

2️⃣ Sear bok choy

  • Add bok choy cut-side down

  • Cook 2–3 minutes until lightly charred

  • Flip and cook 1 minute

3️⃣ Add sauce

  • Push bok choy to the side

  • Add ginger & garlic, stir 20 seconds

  • Add soy sauce, chili sauce, vinegar, water

4️⃣ Finish

  • Toss everything together

  • Cook 1–2 minutes until glossy and tender-crisp
