Bok Choy

4–5 heads baby bok choy (or 2 large), halved lengthwise

Cooking spray or 1 tsp sesame oil
Ginger Chili Sauce

1 tbsp fresh ginger, grated

1–2 cloves garlic, minced
-
1 tbsp low-sodium soy sauce (or tamari)

1 tsp chili garlic sauce or sambal oelek
-
1 tsp rice vinegar or lime juice
-
½ tsp honey or sugar substitute (optional)

2 tbsp water

1️⃣ Heat pan

Heat a skillet or wok over medium-high

Spray with cooking spray or add sesame oil
2️⃣ Sear bok choy

Add bok choy cut-side down
-
Cook 2–3 minutes until lightly charred

Flip and cook 1 minute
3️⃣ Add sauce

Push bok choy to the side
-
Add ginger & garlic, stir 20 seconds
-
Add soy sauce, chili sauce, vinegar, water
4️⃣ Finish

Toss everything together

Cook 1–2 minutes until glossy and tender-crisp
