Ingredients:
- 4 slices whole wheat bread
- 2 large eggs
- 1/4 cup unsweetened almond milk (or any milk of your choice)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup reduced-fat shredded cheddar cheese
- 1/4 cup diced lean ham or turkey bacon
- 1/4 cup diced pickles
- 2 tablespoons light thousand island dressing (store-bought or homemade)
Instructions:
- In a shallow dish, whisk together the eggs, almond milk, garlic powder, onion powder, paprika, salt, and pepper until well combined.
- Dip each slice of bread into the egg mixture, ensuring both sides are coated evenly.
- Heat a non-stick skillet over medium heat and spray with cooking spray.
- Place the dipped bread slices onto the skillet and cook for 2-3 minutes on each side, or until golden brown and cooked through.
- Once the French toast slices are cooked, sprinkle the shredded cheddar cheese evenly over the top of each slice while they’re still hot, allowing the cheese to melt slightly.
- Top two slices of the French toast with the diced ham or turkey bacon and diced pickles.
- Spread the light thousand island dressing over the remaining two slices of French toast.
- Sandwich the dressed slices with the slices topped with ham, bacon, and pickles, creating two Big Mac French toast sandwiches.
