For the flatbreads

  • 4 small naan breads or flatbreads
  • 1½ cups shredded mozzarella
  • ½ cup shredded sharp cheddar or Gruyère

 Instructions

  1. Preheat oven: Heat to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare flatbreads: Place the naan/flatbreads on the baking sheet and lightly brush with olive oil.
  3. Season: Sprinkle with garlic powder, black pepper, and a small pinch of salt.
  4. Add cheese: Spread mozzarella and cheddar/Gruyère evenly over each flatbread.
  5. Add toppings: Scatter dried cranberries and sliced almonds over the cheese. Sprinkle with fresh thyme.
  6. Bake: Bake for 10–14 minutes, until the edges are golden and the cheese is melted and lightly browned.
  7. Optional broil: For extra browning, broil for 30–60 seconds, watching closely.
  8. Finish: Drizzle with a little honey if you like a sweet-savory flavor. Add fresh thyme.
  9. Serve: Let cool for 2 minutes, slice into wedges, and serve warm.
