½ cup heavy cream
¼ cup freshly grated Parmesan
⅓ cup reserved ravioli cooking water
1 tsp lemon juice

Freshly cracked black pepper
A drizzle of extra-virgin olive oil

Step-by-Step
1. Cook the ravioli
Bring a large pot of generously salted water to a gentle boil.

Cook the ravioli according to the package directions, preferably about 1 minute short of fully done because it will finish in the sauce.

Before draining, reserve ⅓–½ cup pasta water.

Drain gently—ravioli can tear easily.

2. Brown the mushrooms

4. Add spinach

5. Make it creamy
Reduce the heat to medium-low.

Pour in the heavy cream and about ⅓ cup reserved pasta water.

Simmer gently for 1–2 minutes.

Add the Parmesan and stir until melted.

The sauce should be silky rather than thick and gluey. Add another splash of pasta water if necessary.

6. Add the ravioli
Gently add the cooked ravioli to the skillet.

Use a large spoon or spatula to fold everything together rather than aggressively stirring.

Simmer for another 1–2 minutes so the ravioli absorbs some of the sauce.

7. Finish
Turn off the heat.

Add lemon juice, parsley and basil. Taste and adjust salt and pepper.

Transfer to bowls and top generously with:
