- ¼ cup milk, as needed
Strawberry layer
- 1½ cups fresh strawberries, finely diced
- 1 tsp lemon juice
- 1 tsp honey or maple syrup
Topping
- ¼ cup crushed graham crackers or granola
- A few diced strawberries
- Optional: 1 tbsp chopped walnuts or almonds
Instructions
- Prepare strawberries: Dice the strawberries and mix with lemon juice and honey. Let them sit for about 10 minutes.
- Make the cheesecake fluff: Add cottage cheese, Greek yogurt, cream cheese, honey/maple syrup, vanilla and protein powder to a blender or food processor.
- Blend until very smooth and creamy.
- Add milk 1 tablespoon at a time if the mixture is too thick.
- Gently fold in most of the diced strawberries.
- Spoon the mixture into 4 small dessert cups or jars.
- Refrigerate for at least 1 hour.
- Before serving, top with the remaining strawberries and crushed graham crackers/granola.
