Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Slice the zucchini into thin, even rounds. Sprinkle with salt and let sit for 15–20 minutes. Pat very dry with paper towels to remove excess moisture.
  3. Melt butter in a saucepan over medium heat. Add garlic and cook for about 30 seconds.
  4. Whisk in the flour and cook for 1 minute.
  5. Slowly whisk in the heavy cream and milk. Add salt, pepper, Italian seasoning, onion powder, and paprika.
  6. Cook for 3–5 minutes, stirring constantly, until the sauce thickens slightly.
  7. Remove from heat. Stir in the Parmesan and 1 cup mozzarella until melted and creamy.
  8. Arrange half of the zucchini slices in the prepared baking dish. Spread half of the cheese sauce over them.
  9. Add the remaining zucchini and remaining sauce. Sprinkle the top with mozzarella and Parmesan.
  10. Cover loosely with foil and bake for 25 minutes.
  11. Remove the foil and bake for another 15–20 minutes, until the zucchini is tender and the cheese is golden and bubbly.
  12. For a more golden top, broil for 1–2 minutes, watching carefully.
  13. Let rest for 5–10 minutes, then garnish with parsley and serve.
