For the Zucchini
- 4 medium zucchini, thinly sliced

- 1 tablespoon olive oil

- 1/2 cup shredded mozzarella cheese

- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Slice the zucchini into thin, even rounds. Sprinkle with salt and let sit for 15–20 minutes. Pat very dry with paper towels to remove excess moisture.
- Melt butter in a saucepan over medium heat. Add garlic and cook for about 30 seconds.
- Whisk in the flour and cook for 1 minute.
- Slowly whisk in the heavy cream and milk. Add salt, pepper, Italian seasoning, onion powder, and paprika.
- Cook for 3–5 minutes, stirring constantly, until the sauce thickens slightly.
- Remove from heat. Stir in the Parmesan and 1 cup mozzarella until melted and creamy.
- Arrange half of the zucchini slices in the prepared baking dish. Spread half of the cheese sauce over them.
- Add the remaining zucchini and remaining sauce. Sprinkle the top with mozzarella and Parmesan.
- Cover loosely with foil and bake for 25 minutes.
- Remove the foil and bake for another 15–20 minutes, until the zucchini is tender and the cheese is golden and bubbly.
- For a more golden top, broil for 1–2 minutes, watching carefully.
- Let rest for 5–10 minutes, then garnish with parsley and serve.
